Material of our japanese cooking knives

The so-called damascene-steel is made of different steel hardnesses and hand-forged in several layers. This so formed blades are at the same time elastic and very hard. When cauterizing the surfaces of the damascene steel, the typical damascene pattern becomes visible. This fine art of forging knives has it's origins in the tradition of the undestroyable Samurai swords, which have been forged in the same manner. Thanks to sophisticated material technologies, it is nowadays possible to forge to damascene blades also low-corrosion up to corrosion free steel sorts.

The knives are ergonomic, this means that the design of blade and handle as well as the perfect weight distribution between bladen and handle prevent thewrist from fatigue, also when using the knive over many hours.
